THE CONCEPT

AUTHENTIC JAPANESE CUISINE IN SWITZERLAND

Welcome to “Washoku”, traditional Japanese Cuisine. It’s since 2013 UNESCO Intangible Cultural Heritage of Humanity.

It is considered a healthy cuisine because Japanese diet includes land and sea vegetables (seaweed). Seafood is lower in calories than meat, the fats it contains are of the ‘good’ kind. Some fermented products (as Miso) add various kinds of beneficial flora to our digestive systems.

Two foods that are integral part of Japanese cooking are tofu and green tea. Tofu is a great source of vegetable based protein and green tea has been given all kinds health benefits for its .

The healthiest parts of Japanese cuisine has to do with the way food is consumed: in moderation and with lots of variety.

In order to cook homemade authentic Japanese sushi and food, impeccable freshness is the key to make this experience really special.

I use only the best quality ingredients, no glutamate or preservatives in my recipes.

CULINARY EXPERIENCE AT WALENSEE: SUSHI AND TRADITION

THE MISSION

The chef Karina Miura's born in Brazil, the third generation of Japanese immigrants. As a child she helped her grandmother in the kitchen to prepare many recipes and sushi for family celebrations.

Hers cuisine today maintains the original as much as possible to revive its traditions and because it is one of the healthiest ever due to the diversity of ingredients and the balance of nutrients, naturally free of gluten and dairy products, unsaturated fats, but incredibly simple and delicious .

We are passionate about Japanese cuisine and are committed to bringing the authentic flavors of Japan to our restaurant and course offerings. Our chef works with fresh, high-quality ingredients, ensuring an unforgettable gastronomic experience. We offer a variety of courses and events, perfect for those who want to learn the art of sushi or learn to cook with Japanese ingredients and have a healthy habit of eating different types of nutrients portioned in the concept of "Ichiju Sansai" (a soup with three dishes ), a Japanese style meal, or just having fun with friends and family. Come and visit us for lunch, dinner or to participate in one of our training events!
